This recipe is a party favorite. Fresh, healthy, and full of spicy flavor.  This salsa is not only easy to make but looks great too! Using fresh and healthy ingredients makes this a great vegan and vegetarian snack. If you’re a fan of pico de gallo, this is absolutely the salsa recipe for you!

Ingredients

Scale
  • 68 medium sized Roma Tomatoes
  • 1/2 red onion
  • 1 whole jalapeño
  • 6 cloves of garlic
  • 1/4 cup fresh cilantro (chopped)
  • 45 tablespoons fresh lime juice (23 limes)
  • 1 teaspoon salt
  • 3 tablespoons white wine vinegar

Instructions

  1. Chop and dice the roma tomatoes and add to a bowl.
  2. Finely dice the red onion, jalapeño, and garlic and add to the bowl.
  3. Chop the fresh cilantro and add to the bowl.
  4. Slice the limes in half and squeeze fresh juice over the mixture of tomatoes, jalapeño, garlic, and cilantro.
  5. Pour in the white wine vinegar. Add the salt.
  6. Mix thoroughly and enjoy!

Notes

Swap the jalapeño for a habanero pepper if you want a really spicy salsa. Or let the salsa set in the fridge for a few hours before serving to help intensify all the fiesta flavors!
