Gluten Free Oat Flour Pancakes

Ingredients

  • 2 cups whole grain organic gluten free oats
  • 2 eggs
  • 3 medium to large bananas
  • 2 tablespoons honey
  • 1/4 cup almond milk
  • 1 teaspoon vanilla
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 12 teaspoons butter
  • 1 teaspoon cinnamon (optional)

Instructions

  1. Heat a pan or griddle to medium high heat.
  2. To your blender add your whole grain organic gluten free oats and blend on high for 5-10 seconds. The consistency should look like flour.
  3. Pour out the oat flour into a bowl add baking powder and salt and then set aside.
  4. In the blender add the eggs, bananas, honey, almond milk, and vanilla (cinnamon-if desired). Then add back in the oat flour last.  
  5. Blend all ingredients for 15-20 seconds or until mixture is fully blended with no lumps.
  6. In the pre heated pan or griddle add a pat of butter. Once melted, ladle approx. 1/4 cup pancake batter at a time into the pan.
  7. Cook until bubbles start to form on the surface of the pancakes and the edges start to lift slightly from the pan or griddle.
  8. Flip pancakes and cook for another 1-2 minutes. Serve and enjoy!!
