Chocolate Chip Oatmeal Cookies

Staple recipe in our household. This cookie recipe is tried and true, and never fails. Seriously amazing chocolate chip cookies! They’re perfect with chewy, dense, centers and slightly crisp on the outside. Put together with Ghirardelli chips, each cookie gives a melty gooey chocolate in every bite!

Ingredients

  • 1 1/4 cups all purpose flour
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 cup butter, softened
  • 1 egg
  • 1 1/2 teaspoons vanilla extract
  • 8 ounces semi-sweet chocolate chips
  • 1 cup old fashioned oats

Instructions

  1. Preheat oven to 350º F.
  2. Line two baking sheets with parchment paper or nonstick cooking mats.
  3. Mix flour, baking soda, and salt in a medium sized bowl; set aside.
  4. In a separate bowl (or stand mixer) beat the butter, sugar, and brown sugar for 2 minutes, then add the egg and beat another 2-3 minutes until the mixture is light and fluffy. Mix in the vanilla and beat until just blended.
  5. Combine half of the dry ingredients (flour, baking soda, and salt) with the wet ingredients (butter, sugar, egg, vanilla) and mix until just blended. Then, add the other half of the dry ingredients and mix until blended.
  6. Add the oats and semi-sweet chocolate chips, and then mix lightly until the mixture comes together.
  7. Using a cookie scoop or ice cream scoop, Put a tightly packed scoop of the batter on the lined cookie sheets.
  8. Bake the cookies 12 minutes, until they look slightly brown around the edges. transfer the cooled cookies to a wire rack and let the cool fully for another 10 minutes.
  9. Serve and enjoy!

Notes

Instead of oats or chocolate chip, try adding in some of your favorite cookie mix-ins. (M&M’s, coconut, white chocoalte chips, peanut butter chips, etc.)
